Mac-n-Cheese-n-Peas

Like most households, we definitely have a stash of the “blue box” staple in our pantry.  But, I have found that this slightly healthier variation is just as quick and easy, and my boys definitely eat it up just the same!

Today, I had a few “helpers” while the noodles were cooking. 

Now, you can totally use the shake and sprinkle cheese, but I have a weakness for freshly shredded cheese. It is a splurge item on my grocery list.

Just be warned that if you do this

…your helpers will most likely have to do this.

Just a little more, Mom.  We have to make sure it is good enough for our lunch.

Plus a few additional mintutes for mom to prepare lunch fuss-free. 😉

Mac & Cheese & Peas

2 cups Pasta Noodles
1-2 Tbs Olive Oil
2 Tbs Milk
1 cups Peas  (I usually make an entire bag of frozen peas and save the leftovers for a snack the next day.)
1/2 cup Parmesan Cheese

Cook the pasta according to package directions.  Meanwhile, shred a little Parmesan cheese and prepare the peas – either pop them in the microwave or steam them in a separate pan.  Drain pasta water and return noodles to pan.  Add olive oil, milk, and peas.  Mix and serve in a bowl.  Sprinkle generously with Parmesan cheese while still warm.  Enjoy!

Prep Time:  Under 10 Mintues

Toddler Rating:  2 Empty Bowls…minus a few stray peas!!  
(Today, I actually had to slow Big Brother down and remind him to chew…and breathe.) 
Mess Factor:  Low
Serving Suggestion:  This dish is great on its own as it incorporates grains (pasta), protein (pasta and cheese), healthy fat (olive oil) and veggies (peas), but add some fruit and a cup of milk to make a completely pyramid-worthy* meal.

Just be sure to make enough for yourself…or you might be tempted to swipe some from your kiddos. 😉
