These quick English muffin pizzas were a hit with my little guys this week, who are pretty much loving anything they can “Dip! Dip!” into a sauce. So it goes without saying that this was right up their alley. Better yet, with a little picking and choosing what you do (or don’t) put on the pizza, this meal can be a pretty healthy lunch option.
I happened to find this Prego “Veggie Smart” pizza sauce which is loaded with veggies (sweet potato and beet juice to name a few…bonus points!) and has no sugar added. You can also use whole grain muffins to help increase the nutritional value of the meal.
The basic recipe is really simple, but you can add your own ideas and toppings to change it up each time.
Little Fry Pizza Pie
1 English Muffin
1 tsp Olive Oil
2 Tbs Pizza Sauce
1/2 c Shredded Mozzarella
Optional seasonings – Basil, Oregano, Garlic
Pre-toast your English muffin on a low toaster setting. Drizzle each half with the olive oil, and top with sauce, cheese, and seasonings. Microwave or toast in oven at 350 until the cheese is melted. Cut into bit-sized pieces, let cool – the sauce may be hot – and enjoy!
Prep Time: 5-10 Minutes
Toddler Rating: Two clean plates, plus some from mom’s plate.
Mess Factor: Medium to High – At our house, anything with tomato sauce automatically starts at medium. If we are dipping in extra sauce, we are entering the “High” mess zone.
Serving Suggestion: Cut the pizza into strips and let them dip the strips into a *little* bit of sauce in a toddler-proof bowl. Serve with sliced sweet peppers, which they can also dip.
