Weeknight Veggie Pizza

While there is nothing earth-shatteringly original about this recipe, this pizza was delicious, healthy-ish (for a pizza), and on the table in less than 20 minutes.    

Oh, and if that wasn’t enough, my boys (husband included) devoured it, vegetables and all, so I think we’ll be making this one again.  The Boboli whole wheat crust (which can make or break a pizza) was actually really good.  The only change I might make next time is to try some fresh mozzarella cheese rather than the pre-shredded, and I might throw in some basil when it is ready from the garden.  But, the spinach was really yummy this time around!  Enjoy!

Weeknight Veggie Pizza   

1 Boboli Whole Wheat Pizza Crust
1/2 c Prego Veggie Smart Pizza Sauce
2 c shredded Mozzarella Cheese
1/4 c shredded Parmesan Cheese
1/2 Sweet Red Pepper, diced
1/2 c Spinach or Basil, chopped
1 Small Tomato, sliced

Spread sauce evenly onto crust.  Top with 1/2 the mozzarella cheese.  Add toppings and then the remaining mozzarella.  Sprinkle with Parmesan.  Bake according to crust package instructions.

  2. I like to sprinkle just a few red pepper flakes on my veggies pizzas. Adds just a touch of extra flavor. Although, who am I kidding? My little boy would still eat half of it. :) Coming to you from the blog hop.
