Here is one we loved this past week. The original recipe (with a touch more “kick”) can be found at Six Sisters’ Stuff, but we toned down the heat just a touch for our little guys.
1 lb Ground Beef (or Turkey)
1 8-oz package Reduced Fat Cream Cheese, Cubed
1/2 Sweet Red Pepper, Chopped
1/2 small Sweet Onion, Chopped
1/4 tsp Cumin
1/4 tsp Chili Powder
2 packages Crescent Rolls*
Preheat oven to 375. Saute beef, peppers, and onion in a medium skillet until beef is cooked through and vegetables are tender. Drain fat and return to skillet. Add cream cheese and seasonings. Cook over medium-low heat until cheese is melted, stirring frequently. Add approximately 1 tbs of beef to each crescent roll. Beginning at base of the triangle, roll the crescent and tuck ends as needed around beef mixture. Place seam side down on ungreased baking sheet. Bake 12-14 minutes.
*For our family of 2 adults and 2 toddlers, one package of crescents (8 count) was enough for one meal. I froze the remaining half of the prepared beef mixture so it will be ready to use for this quick meal again sometime next month.
