Either way, it is delicious!
4 cups Brown Rice, cooked
1-2 cups Cooked Chicken, chopped or shredded
1 Carrot, shredded
1 cup Grapes, cut in half
1 Cucumber, diced
3/4 cup Balsamic Vinaigrette Dressing
3/4 cup Plain Greek Yogurt
Mix first 5 ingredients in a large bowl. In small bowl, whisk together dressing and yogurt. Pour dressing over chicken and rice mixture and mix well. Chill overnight in refrigerator. Enjoy!
Recipe Options: Throw in a cup of toasted walnuts or slivered almonds for some added healthy fats and yummy crunch. Sour cream may also be used in place of Greek yogurt.
