Tater Tot Casserole

This casserole has been a favorite with my little “tots” lately.  It works for us because I can prepare it during naptime, and then just pop it in the oven later in the day.  It’s also pretty simple to double and freeze, which makes it a winner for us as well. 

One ready for the dinner table and one ready for the freezer!

And, my little guys don’t seem to mind the addition of green beans, corn, onion, and mushroom to this casserole.  I hope you enjoy this dish as much as we do!  


Tater Tot Casserole

1 lb Ground Beef
1/4 c Onion, diced
1 can Cream of Mushroom Soup
1 c Milk
1 can Corn, drained and rinsed
1 can Green Beans, drained and rinsed
2 c Cheddar Cheese, shredded
1 pkg Frozen Tater Tots

Preheat oven to 375 degrees. In a large skillet, brown ground beef with onions.  Drain fat.  Add meat, soup, milk, rinsed vegetables, and cheese to a large bowl and mix well with spoon.  Pour mixture into a 9 X 13 casserole dish and cover with tater tots.  Cover casserole with aluminum foil and bake for 30 minutes.  Remove foil and bake an additional 5-10 minutes until bubbling and browned.      
*Recipe notes:  This recipe can be easily doubled for freezing. To freeze second casserole, cover tightly with a layer of plastic wrap followed by aluminum foil.  (Just be sure to remove the plastic wrap before baking!)  Also, the sodium content can quickly get pretty high on this recipe.  I would definitely suggest rinsing the canned vegetables (as they are packed in salt for preserving), or better yet, substitute with a cup each of frozen beans and corn, similar to the recipe here at Freezer Meals for Us.  Finally, this casserole would be delicious with ground chicken or turkey in place of the beef if you are looking to cut back on red meat.
