This post is inspired by the memory of one of my all time favorite school lunch “trading” items. You remember those good ‘ole lunch swaps, right? After a long morning of school work and recess, you’d finally hop up to the table, open your brown bag, pull out your items, and the negotiations would begin.
I must brag for a moment, as I always had some pretty good trading ammunition. My mother was a lunch packing pro; many times I’d even find a sweet little note tucked in my lunch bag reminding me to ride the bus or wishing me luck on my spelling test. If I haven’t told you, thanks, Mom.
One of my most sought after lunch table items were these graham cracker sandwiches, which were usually in the lunch bag one of my best childhood friends. Her mom packed a pretty stellar brown bag as well. By the time of the trade, the grahams had softened just enough…and the sweet cream cheese icing…mmmm. I lost many a fruit chewy to these in my day.
So, with my own little guys asleep the other afternoon, and some leftover homemade icing in the fridge, I reminisced about those school lunch trades as I frosted up a few. I popped them in the fridge, and by the time my sleepy heads were up and ravenous, their graham sandwiches were soft and sweet. What a lovely little post-nap treat. Enjoy!
Simple Graham Sandwiches
8 oz Cream Cheese, Softened
1 stick Butter
2 cups Powdered Sugar
Using a hand-held blender, cream the cheese and butter. Add powdered sugar and mix until blended. Frost 1/2 of cracker and top with remaining half. Place in air tight container and refrigerate for 2 hours or up to overnight. Enjoy.
*Icing recipe can easily be halved as it will make plenty. Simply keep the ratio the same.
