Easy Turkey and Stuffing Casserole

Wish you could enjoy that wonderful turkey and stuffing holiday meal year-round without the all-day prep?  This casserole is great for leftovers, but can also be easily made with either chicken or turkey breast and that classic and quick stove top stuffing mix.  Serve it with a simple sweet potato side and some cranberry sauce, and you can have that holiday flavor anytime of year.  Enjoy!
Easy Turkey and Stuffing Casserole
2 cups Chicken or Turkey Breast, cooked and cubed or shredded
1 box Stove Top Stuffing Mix
1 can French Onions
10 oz Broccoli, frozen or fresh
1 1/4 cup Milk
1/2 cup Light Sour Cream
1 can Cheddar Soup, reduced fat variety
Preheat oven to 350 degrees.  Prepare stuffing mix according to package.  Add 1/2 can of onions.  Spread stuffing and onion mixture in bottom of a greased 9×13 casserole dish.  For the second layer, arrange broccoli on top of stuffing.  In a separate bowl, combine cheese soup, milk, chicken, and sour cream.  Pour cheese and chicken mixture over broccoli and stuffing.  Bake covered for 30 minutes.  Uncover and top with the remaining 1/2 of french onions.  Bake an additional 5 minutes.

Notes:  If freezing, do not completely thaw frozen broccoli before assembling casserole.  (Just break up or thaw enough to separate.)  Partially cooked broccoli can also be used for same day baking or freezing.  Green beans could be substituted for broccoli.
