Egg-Free Yogurt Muffins – 3 Delicious Varieties

These delicious little muffins have been a hit in our house lately.  I first came across them when a friend of mine made them for a playgroup snack.  We especially loved them because they are egg-free, which is great for my *somewhat* egg-allergic boys.  (They look to be outgrowing the allergy, but we still do a lot of egg substitutions when cooking.)  The basic recipe is quite simple and can easily be modified to create different flavors.  We typically throw in a little whole-wheat flour for some added fiber.  Though the mix is somewhat thick, the muffins turn out light and fluffy.  Enjoy!

 

Here are our favorite varieties, although you can easily make your own creation by swapping out the yogurt and mix-ins.  (Chocolate chip is also delicious!)
